Richard Melman, director of Lettuce Entertain You Enterprises is turning his L2 restaurant into a culinary “school for entrepreneurs, ” as reported by the Chicago Tribune. It will feature a new chef every two to three months, with the idea of giving culinary talent exposure and appreciation for their work. Lettuce Entertain You will be on hand to provide advice to the new chefs, who are hoping to eventually break out on their own.
Not only with new chefs have the opportunity to avail themselves of Lettuce Entertain You’s counsel and services, but Chicago diners will be able to enjoy food from great chefs from coast to coast, and the chefs will also have the opportunity to meet potential investors who may fund their concepts.

The first chef featured will be Chris C.J Jacobson, chef at Girasol in Studio City, California. He recently beat out 17 other chefs in this season’s “Top Chef Duels.”
Melman reports, “C.J cooked for me one night. It was terrific. I asked him to cook a second night, and he knocked me out. I told him, if you want, you’re the first guy.”
