Blaze Fast-Fir’d Pizza, with a little help from Levy Family Partners, is expanding to 5 new locations in Chicago and Evanston on the Northwestern Campus. Blaze is one of the biggest names in self-created pizzas, and clients are allowed to select their own items. The Build Your Own concept makes the pizzeria more interactive than the old days when customers would stare open-mouthed at a guy tossing a disk of dough in the air. The pizza is fired up with a maximum 180 second finish time. The dough is handmade, and its specialty 24 hour rising time formula keeps the crust airy and crisp. Vegan and gluten-free options are also available, and the packaging is eco-friendly and recyclable.
