Every year for decades, the 1st February is the most anticipated day of the year for chefs and key players of the culinary world across France. After rumours picking up pace these last few weeks, the team behind the Michelin Guide, the most prestigious culinary guide and “the only one that counts, ” according to the legendary French chef Paul Bocuse, finally reveals this year’s gained and lost stars.

The awards ceremony at Place Vendôme began with a minute of silence for three-star chef Benoît Violier, who was found dead on Sunday in his Swiss home of an apparent self-inflicted gunshot.

Two of Paris’s ritziest dining establishments joined the select list of three-Michelin-star restaurants in the 2016 Michelin Guide. Chef Alain Ducasse recuperated a third star for his restaurant at the Plaza Athénée hotel while Christian Le Squer won a triple star for Le Cinq, his restaurant in the George V hotel.

In bestowing the award, the guide’s international director, Michael Ellis, said Ducasse’s cuisine “offers an unprecedented marriage of flavours and shakes up the codes of haute gastronomy”.
